Monday night dinner with Bunny has moved to Tuesdays since my study class is on Mondays.
Tonight was a meal, courtesy of Real Simple Magazine that i got in the mail a few days ago. I altered the recipe a bit - as it called for water - what?
Rigatoni with sausage and onion
Ingredients:
1 small onion, cut into thin rings
2 cloves garlic, minced small (i cheated and used the already minced - but it was fresh from central market - not in that jar...oh yeah, I added this to the recipe too.)
1 head broccoli, sliced relatively small
6oz (i used the whole package) pre-cooked sausage
1/2 cup parmesean cheese, grated
1 1/2 cups chicken broth
1 pound rigatoni
Place large pot on stove and bring water to boil for rigatoni.
Meanwhile, saute onion in a little olive oil until soft, add garlic and sliced sausage and cook until sausage is browned. Pour in broth and add broccoli. cook, covered, about 5 min. Remove lid and turn heat up to get the liquid really bubbly and evaporating. Once reduced until there is about 1/4 cupish left, remove from heat.
Toss cooked pasta with mixture and cheese. A little extra cheese sprinkled on top doesn't hurt a thing.
Except your thighs.
But whatever.
And a few glasses of chardonnay....
